I'm trying to determine if there is an option to not allow users to change their email in their settings page. Is there a configuration option for this in the Ory Console?

You can use a custom UI for the settings page and not include that option.
But I think the user would still be able to change it using an API call (probably not viable for your average user, but something to keep in mind)
