Has anyone had any luck deploying Ory to an older Kube cluster (node version 1.14-1.15)? Current helm charts don't support those versions.

Hello there, yes, we had to some time ago made the decision to drop support for older version due to the deprecation of certain k8s objects. If this is your issue, then charts prior to https://github.com/ory/k8s/releases/tag/v0.19.0 should still work for you
