It appears the configuration documentation on the ory website is out of date. For example, the tracing provider section hasn’t been updated to include the change to using Opentelemetry which doesn’t support datadog, elastic-api and instana providers.

Does it generally work? I tried it a few weeks ago and couldn't get jaeger (or zipkin? Don't remember) traces to show up in tempo. Would be curious if you made it work and how.
