Hi, do you have documents or examples on how to extend Kratos

We do not save email in plaintext in our database as we consider email as PII, looking for ways to extend Kratos to handle this case

That is an interesting case, that is probably not trivial to solve.
At Ory Network for example we encrypt all user data at rest and in transit.
